An autumn and winter icon of the cheese world. Made seasonally in the Franche-Comte, this soft cheese is wrapped in a spruce band, helping to impart distinct pine flavours to the existing cream fraiche, lactic sweetness and funk. Made with unpasteurised cow's milk and vegetarian rennet.
